Cooking & Temperature Guide

Low Temperature

Place your smoking wood chunks on the grate. Add 5 x charcoal of your hands held together. Try to balance the size of the charcoal pieces, some big, some small.

Light the lump charcoal according to the usage instructions below. Do not move or stoke the coals once lit. Open the bottom vent fully and leave the lid open for about 10 minutes to build a small bed of hot embers. Close the lid & monitor the Kamado as the temperature rises.

Monitor the Kamado until it has risen to the desired temperature. Leave the bottom vent slightly open. Close the top vent and continue to check the temperature for a few more minutes.
You are now ready to cook. Refer vent setting chart below

 

High Temperature

Place your smoking wood chunks on the grate. Add 12 x charcoal of your hands held together. Try to balance the size of the charcoal pieces, some big, some small.

Light the lump charcoal according to the Usage instructions above. Do not move or stoke the coals once lit. Close the lid and fully open the top and bottom vents. Monitor until it has risen to the desired temperature. Close the top vent half way and continue to check the temperature for a few more minutes. You are now ready to use the Kamado for cooking on.
