French Oak has a tight-grained wood structure, which imparts subtler tastes like aromatic spices, cedar, cashew nut and cocoa notes. The oak profile has a medium smoky flavour that is stronger than apple and cherry, but lighter than mesquite. It's great by itself, but also works well blended with apple or cherry. Oak works well with just about any meat and that's why it's the most versatile wood smoke.

How many wood chunks do you add to your fire? 1 - 4. Consider this, Toast in a barrel refers to the char the barrel makers add to the inside with an open flame. This toast can be light, medium, medium-plus, and heavy. Light and medium toast offer a gentle oak aroma and nuanced notes of some grape varietals like Chardonnay and Pinot Noir. Medium-plus and heavy toast are often used for more hearty, robust grape varietals like Cabernet Sauvignon and some Brandys and Whiskeys for a smoky flavour profile.
